Masa cooking class is an elevated culinary experience focused on the ancient art of crafting masa from scratch, the cornerstone of many Latin American dishes. The class begins with an introduction to the history and cultural significance of masa, exploring its essential role in traditional recipes like tamales, tortillas, and gorditas. Participants are introduced to the finest, heirloom corn varieties, sourced from local artisanal mills, and learn the process of nixtamalization—an ancient method of soaking and cooking corn in limewater to unlock its nutritional value and flavor. Throughout the experience, the class emphasizes the importance of balancing flavors, textures, and presentation, using fresh, high-quality ingredients. The culmination of the class includes a tasting of a dish made, paired with artisanal salsas, fresh cheeses, and offering a luxurious and intimate exploration of masa's rich culinary possibilities.
