The class begins with an introduction to the foundational principles of sourdough, including the science of wild fermentation, the role of natural levains, and the importance of using premium, organic flours and grains. Under the guidance of experienced chef John Bender, participants learn to cultivate their own sourdough starter, understanding the subtle balance of hydration, temperature, and feeding that fosters a healthy, active culture. The class progresses to the hands-on process of mixing, kneading, and folding the dough, with a focus on developing gluten structure and achieving the perfect texture. Throughout the class, there’s an emphasis on artisan techniques, with tips for achieving a golden, crispy crust and a soft, flavorful crumb. Participants will leave with the skills and knowledge to bake their own high-quality sourdough loaves at home, elevating their baking to an artisanal level.
A sushi class is a culinary adventure that immerses you in the art of Japanese cooking, offering both a deep respect for tradition and the chance to create your own masterpiece.The class begins with an introduction to the cultural significance of sushi in Japan. Then chef, John Bender, explains the history of sushi, from its humble origins as a street food to its elevated status in fine dining. You’ll learn about the different types of sushi, such as nigiri, maki, and temaki, as well as the key ingredients used, like vinegared rice, fresh fish, seaweed (nori), and vegetables.. I will be providing each student with their own sushi mat, a container of uncooked sushi rice, sushi vinegar, wasabi, nori and chopsticks.
