These pillowy morsels are so fun to make and we’re going to learn to make them together. Kitchen Technique will be providing you with recipe(s) and preparations on how to make gnocchi as well as enjoying a dish prepared by chef. Kitchen Technique is an educational forum; focusing on the preparations, culinary technique, origin/history, and most importantly acquainting each other with the theme of this class.
Kitchen Technique potsticker class offers a sophisticated, hands-on culinary experience where participants learn to master the art of crafting delicate, flavorful potstickers from scratch. The class begins with an introduction to premium, locally-sourced ingredients—such as fresh vegetables, artisanal meats, and aromatic spices—that elevate the dish to a gourmet level. Participants are guided by skilled chef John Bender, who demonstrates the precise techniques of making the dough from scratch, rolling it to the perfect thinness, and expertly folding the dumplings to create the signature pleats. The filling process includes an exploration of traditional and creative combinations, from classic pork and cabbage to modern twists.. Attendees also learn the secret to achieving the perfect crispy-bottom texture while ensuring a juicy, flavorful interior. The class emphasizes technique, presentation, and the joy of creating high-quality, restaurant-worthy dumplings at home.
The class begins with an introduction to the foundational principles of sourdough, including the science of wild fermentation, the role of natural levains, and the importance of using premium, organic flours and grains. Under the guidance of experienced chef John Bender, participants learn to cultivate their own sourdough starter, understanding the subtle balance of hydration, temperature, and feeding that fosters a healthy, active culture. The class progresses to the hands-on process of mixing, kneading, and folding the dough, with a focus on developing gluten structure and achieving the perfect texture. Throughout the class, there’s an emphasis on artisan techniques, with tips for achieving a golden, crispy crust and a soft, flavorful crumb. Participants will leave with the skills and knowledge to bake their own high-quality sourdough loaves at home, elevating their baking to an artisanal level.
